I have got my bunting hanging on my bamboo fencing…i have put out lanterns on my washing line and stuck a couple of GB flags in my newly potted plants!! Ready for the wedding of the year (possibly century!). There are plenty of grumpy people in Britain who don’t want to watch the Royal Wedding (can you believe people are still grumpy even though we have been given an extra day off work?!) But I for one am looking forward to the occasion – surely its an historic event, one that when I am a Granny i can reminisce with my grandchildren!

GIANT CHEESE STRAWS – For the 24 cooks working at Buckingham Palace, the royal wedding breakfast menu is a secret guarded just as closely as the designer of Kate Middleton’s dress. We’re not betting on these grown up cheese straws made with English Stilton and fig relish being served though!
425g Jus-Rol puff pastry sheets
1 tbsp Tracklemans organic fig relish
75g Stilton Cheese
1. Preheat the oven to 220 degrees C – Gas Mark 7
2. Line a large baking sheet with greaseproof paper
3. Lay out one of the pastry sheets and spread the fig relish all over it. Grate the cheese and scatter over. Cover with the remaining sheet of pastry and roll to thin out and join.
4. Using a sharp knife, cut out 10 vertical long strips. Twist each one a few times and place on baking sheet. Bake for 10 – 12 mins until golden brown. Serve when cool.
STRAWBERRY AND PINK CHAMPAGNE TRIFLE – Trifles are a crowd pleaser and granny’s favourite. While our old dears are likely to reach for the sherry to booze up our pudding, we’re sure William’s granny can stretch to popping the cork on some pink champagne.
Serves: 8 – 10
1 large strawberry Swiss roll
For the jelly:
500g frozen berries such as strawberries and raspberries
1 sachet agar
175g caster sugar
350ml pink champagne such as Laurent-Perrier Cuvee Rose
For the topping:
300g strawberries and raspberries
300ml double cream
1 tbsp caster sugar
600ml ready-made custard
30g toasted flaked almonds
1. Make the jelly first of all – heat 200ml of the champagne with the sugar over a medium heat and stir in the agar. Add the berries and simmer over a low temperature for 3 – 4mins.
2. Pour this mix into a container, then top up with the remaining wine. Cool and refrigerate to set.
3. To assemble the trifle, slice the Swiss roll and arrange it on the base and around the inside of a large glass serving bowl.
4. Turn the jelly out on to a board and chop with a sharp knife. Scatter it over the Swiss roll. Pour the custard over the jelly.
5. For the topping, whip the cream to soft peaks with 1tbsp sugar and spoon over the custard in dreamy mounds. Decorate with the fresh strawberries and raspberries and a scattering of toasted almonds.
